    You can use cow meat, goat meat, or assorted meat. Mixing different proteins gives deeper flavor if possible.
  • Cow skin (optional)
  • Dry fish
  • Stockfish (optional)
  • Fresh fish (optional)

Even if you don’t have all of these, don’t worry. This soup is very forgiving. Use what you can afford or what you have available.

Vegetables

For this recipe, I used:

  • Pumpkin leaves (Ugu) – this was the main vegetable, I used more of it.
  • Uziza leaves (optional) – added in a smaller quantity.

Uziza leaves are optional but they are still very important. They add a gentle spicy note and a beautiful aromatic flavor that lifts the entire soup. When combined with ugu, the balance is perfect. Ugu gives body and freshness, while uziza adds depth and subtle heat.

Tips:
I wash all my proteins and vegetables with salt to help eliminate germs and debris. I also have a special iron sponge that I use exclusively for washing kpomo (cow skin) to ensure it does not get contaminated from contact with other items. Washing kpomo with an iron sponge helps remove all the sand and dirt properly, as kpomo usually contains a lot of dirt.
